Summer Vegetables & Ground Meat Curry

MAKES TEN SERVINGS

INGREDIENTS

1 box (7.1 oz) House Kokumaro Curry (Med. Hot)
8 oz ground beef
8 oz ground pork
2 onions, cut into bite-size pieces
2 zucchini, cut into 1/2” slices
2 yellow bell peppers, seeded and cut into bite-size pieces
2 tomatoes, chopped into bite-size pieces
2 tbsp vegetable oil
5 cups (approx. 1200 ml) water

DIRECTIONS

1. In a large pot, heat vegetable oil. Saute onions and ground meat (beef and pork). Add bell peppers. Cook until vegetables are tender.
2. Add water to meat/vegetable mixture and bring to a boil. Remove foams on the top. Simmer for about 5 minutes over low to medium heat. Add zucchini and cook for another 10 minutes.
3. Turn off the heat. Break House Kokumaro Curry roux and add to the meat/vegetable mixture. Mix well. Heat again and cook for another 10 minutes over low heat or until sauce thickens. Add tomatoes. Serve hot.
