In a bowl, combine ingredients for filling: ground pork, cabbage, green onion, shiitake mushrooms and Chinese chives.
Season filling with House Foods Shoga, Orishi Shoga, Kosho, soy sauce, miso and ½ Tbsp. sesame oil; mix well.
Place about a tablespoon of filling on a dumpling skin and wrap it, continue to do so until filling is finished. While working with dumplings cover the completed dumplings with a damp towel so they don’t dry out.
Set a large pan over medium heat and add oil. Once oil is hot, arrange dumplings on pan then add boiling water to about 1/3 of the way and quickly cover with lid.
Steam dumpling until cooked (about 5 - 10 minutes), then remove lid.
Let water evaporate and then add a splash of sesame oil. Let dumplings brown, once they have browned remove from heat and serve.
