In a pot, heat vegetable oil and brown ground beef and/or pork. Add onions, eggplants, bell peppers and half the amount of tomatoes.
Add water and bring to a boil, skim off any white foam from the top of the liquid. Once water starts boiling, reduce heat to medium, cover the pot and simmer for 5 minutes.
Remove from heat, break up House Foods Java Curry roux and mix well. Cook for additional 10 minutes over low heat.
Add remaining tomatoes and cook for 2 minutes. Serve with rice.
