Spinach Pork Curry

Cooking Directions

  • Blanch spinach, once cooled squeeze out the excess water and chop finely. Set aside.
  • In a large stockpot, heat vegetable oil and sauté pork, onions and potatoes.
  • Add water and bring to a boil, skim off any white foam from the top. Once water starts boiling, reduce heat and simmer at medium-low for 15 minutes.
  • Remove from heat, break up House Foods Java Curry roux and mix well. Return to heat and simmer for 10 minutes over low heat.
  • Add spinach, and cook for 2 more minutes. Remove from heat and serve with hot rice.
