Spinach Pork Curry

Blanch spinach, once cooled squeeze out the excess water and chop finely. Set aside.
In a large stockpot, heat vegetable oil and sauté pork, onions and potatoes.
Add water and bring to a boil, skim off any white foam from the top. Once water starts boiling, reduce heat and simmer at medium-low for 15 minutes.
Remove from heat, break up House Foods Java Curry roux and mix well. Return to heat and simmer for 10 minutes over low heat.
Add spinach, and cook for 2 more minutes. Remove from heat and serve with hot rice.
