Snap Pea and Egg Curry
In a large pot, heat vegetable oil and cook onions until fragrant.
Add water and bring to a boil, simmer for 3-4 minutes. Add pork a slice at a time and bring to a boil. Skim off any white foam from the top.
Remove from heat and break up House Foods Java Curry roux into pot, mix well. Return to heat and simmer over low heat until sauce thickens, about 5 minutes.
Add snap peas, and cook over high heat.
Pour eggs into pot and heat until soft boiled. Once done, serve over hot rice.

½ lb. pork, thinly sliced
1 onion, sliced
¼ lb. Snap pea, string removed
2 eggs, beaten
1 Tbsp. vegetable oil
2 ½ cups water
rice, to serve
